I've come up with a family friendly light broccoli & chicken pasta that our whole family loved. This is about 1/3 the calories of most white pasta dishes (i.e.: my favorite fettuccine alfredo).
Holidays are a reason for me to indulge in my sweet tooth. I am not a good baker because I don't have the patience to measure, therefor its hit or miss if my goods turn out. What I can do is improvise variations into already prepackaged baking mixes like I did here with these delicious cupcakes. I used cinnamon & sugar, a delicious staple in Mexican baking, along with caramel & ice cream. A very simple Cinco de Mayo inspired twist on your otherwise vanilla cupcake and a perfect last minute dessert for your dinner party or any occasion.

World’s greatest Vegan chili—haha! Okay, I may be biased, but OMG this chili was sooooo good! It’s recipes like this that make me feel like I could totally go Veggie, but then when your kids want steak ALL the time, that makes it hard to even consider. Hope you love it as much as US! This is a dish that is good to make in the morning, as the lentils are dry and need time to rehydrate, so it will need to simmer/cook all day.

"Greek Salad" can be used very lightly in American cuisine and can be served various different ways. This is my spin on the non-traditional American adaptation which even further deviates from the original. I've added tarragon and coconut sugar in the dressing and kale in the body. So why call it a Greek Salad? It has the base of a traditional, but with a modern twist and extra added health benefits.
We make a lot of salads at my house all year long but they seem to change depending on the season. This Champagne Salad is one of my favorite late summer salads and is currently on repeat. I finally feel like I’m as done as I can be with all the gifts and obligations tied to Christmas and so now we are doing fun leisurely stuff like baking. These delicious mini donuts are an easy alternative to Christmas cut out sugar cookies.
